The CBI can affects humans by targeting and infecting the brain but can it affect animals such as dogs, cats, horses or etc.

I don't either. Also, if we want to get into the in-universe rules about the fungus (which don't reflect how diseases work in reality), I would argue that because humans are among the most complex creatures (and our brains have a structure not unlike mycelium, though it probably isn't exclusive to human brains), we are the best candidate. Hopefully that makes a little sense. Regardless of that, I think it's just really symbolic of nature cleansing the world of us (or just giving our species a serious kick in the shins) because we nearly destroyed the environment.

Mother Earth's poetic justice. Although whats mycelium?

Mycelium are the long strands threaded together in a fungal colony. From what I've heard from several sources, they are structured like neural networks. These structures are also highly intelligent. Not in the same way as people of course (that would be disturbing), but still highly intelligent.
Speaking of fungi being awesome/freaky, the largest living thing on the planet is considered to be a specific honey fungus (Armillaria genus) network measuring 2.4 miles (3.8 km) across in the Blue Mountains in Oregon.
Hey, so my friend got infected by cordiceps, he used to be really depressed, but now he's a fun-guy.
Chimps our considered to be our closest relative so it's not completely out of the realm of possibility. Personally I would hate to face off against a raged out Gorilla bloater. Just the strength, size, and weight alone would crush us.

God imagine that.
That could definitely only be a boss battle. Maybe with a tank, or even a helicopter? Or you have to run from it, using rocket launchers and use the environment to trap it. And then maybe use a tank.
